Billecart-Salmon is one of the last standing independent and family-owned Champagne houses. Not only is it still all in the family, but it’s also UNBELIEVABLY GREAT! I have to say it’s simply one of my favourite Champagnes (and don’t even get me started on the Rosé version), and I’m not the only one. Year after year, this Champagne beats out “bigger” champagne houses with the style and grace that founded this Champagne house over 200 years ago.

In 1818, Nicolas François Billecart and his wife Elisabeth Salmon founded the house of Billecart-Salmon in Mareuil-sur-Aÿ, which now stands as the oldest continuously family-owned and operated house in Champagne. The estate is currently managed by the family’s seventh generation, brothers François and Antoine Roland-Billecart, while the cellars lie in the hands of Florent Nys. 

2018 was a special year for Billecart. The House celebrated 200 years of independence and expertise over the past 7 generations. The blend is composed of:

  • 40% Pinot Meunier from the Vallée de la Marne and the slopes of Epernay 

  • 30% Pinot Noir from the Montagne de Reims and the Grande Vallée de la Marne

  • 30% Chardonnay from select favorite crus

The final wine is composed of 3 vintages with up to 40% reserve wine. It is produced completely with first press juice. The wine undergoes a long, low-temperature vinification to preserve freshness and aromas all in stainless steel. It is then aged  3 years on the lees to ensure perfect quality upon release.

Very low dosage: 7g/L

On the palate, the wine possesses crunchy stone fruits, such as white peach and pear. gripping acidity, and a touch of biscuits.
