Pet Nat, or Pétillant Naturel, is the OG version of Champagne. Where Champagne takes a completed wine and ferments it for a second time, Pet Nat is bottled before fermentation is complete so it’s finished in the bottle, thus creating the “Pétillance” in the wine. This technique is called méthode ancestral or méthode rurale.

Due to the wild nature of this wine, it’s important to choose a producer with expertise! Queue Vasco Croft! The resulting wine is consistently DELICIOUS. It’s bright, fresh with a tiny bit of funk, and the Alvarelhão (a red grape) provides the Rosé aspect that gets me every time! It really provides some lovely texture and fruit flavor.
