NV Piper-Heidsieck Rosé Sauvage, Champagne
Rosé Sauvage is a rosé like few others to be found in Champagne. An unusually large proportion of red wines give this Rosé champagne its unique personality. A cuvée particularly daring with a deep ruby color and a unique structure. Rosé Sauvage is a perfect table champagne and will pair wonderfully with a Sunday barbecue in the country. Its dazzling appearance brings to mind a shiny ruby; deep scarlet in color - almost poppy red. Intense aromas of dark berry fruits - imagine blackberry, blackcurrant and strawberry - with mandarin orange and traces of saffron. Juicy berry fruits in the middle-palate, spiced and smoked notes in its stunning finale, this champagne is a mischievous delight.

ON THE NOSE: INFINITELY FLORAL AND MINERAL
The initial nose shines by the pure vivacity of this vintage. As Rare Millésime 2008 gradually warms in the glass, a vast range of orange blossom, hyacinth and white flowers is released. This leads to the delicacy of vanilla blossoms, a touch of fresh coconut, aromas of just ripe Williams pear and fresh almond, enhanced by notes of tangerine and blackcurrant buds. The second nose reveals the saline minerality, abundant and refined, an iodine-smoky harmony and a touch of liquorice.
ON THE PALATE: SPRINGLIKE AND PRECISE
On the palate the crispy, precise attack is followed by exuberant aromas of fresh pineapple, freshly cut and crisp, passion fruit, kiwi and coconut, nuanced with tangy citrus notes. These combine with plush spring-like flavours with unparalleled length. The finish, with remarkable saline and iodine notes, perpetuates the journey into an endless spring.

Hannah and I have been friends for a few years now, and our wine paths have crossed many times. She is indeed one lovely human, and also one heckova winemaker! Much like its creator, this wine is not shy. It's got personality, balance and grace, expertly crafted and from a great vineyard in the SLH region. NB: The beautiful label was created especially for Hannah by a local Alaskan artist, Shilo Cederberg.
The Vineyard - McIntyre Estate Vineyard, within Monterey County’s Santa Lucia Highlands AVA, is in a most desirable location of the AVA. Perfectly positioned to produce great Pinot Noir and Chardonnay. Originally planted in 1973, the 80-acre site (60 acres planted) boasts some of the Highlands’ oldest Pinot Noir and Chardonnay vines.

Charles Heidsieck - NV Champagne Brut Reserve
To this day, Heidsieck is one of the most respected Houses in Champagne and it was also the Champagne served on the Titanic. Thanks to 40% of reserve wines, the blend offers a complex, elegant, voluptuous nose with a touch of freshly baked brioche, rich toasted notes and sun-drenched fruits - mango, apricot and mirabelle plum - accented by dried fruits, pistachio and almond. On the palate the texture is reminiscent of a crisp layer of nougatine on a velvety cream pastry, filled with plump red plums and ripe cherries. The selection of reserve wines gives the wine lushness. The finish unveils notes of praline and vanilla.

The Meyer family has a tradition as vignerons in Blienschwiller that dates back to 1722. Hubert Meyer and now since 2009, his son Pierre, a graduate in oenology, vinify the wines of this estate of about 10 hectares. The range of their good vintages is divided, as is often the case in the region, into Vins de Tradition, dedicated to the 7 Alsatian grape varieties and Vins de Prestige, made from plots selected at harvest when the vintage allows it. The Prestige range includes Pinot Noir aged in barrels, Pinot Gris and Riesling from the Grand Cru Winzenberg Vineyard. Pierre Meyer also makes delicious Crémant d’Alsace Blanc and Rosé Brut following the Methode Champenoise. Converted in Biodynamie since 2019, the wines really express the quality of the terroir and their varietal.

The grape would probably more popular if Hungary didn’t have bigger priorities for the last 500 years than global marketing of their amazing juice, but I guarantee their wines are world-class and Erzsebet Pince (winery) is top. Hungarian for Elizabeth, Erzsebet is also the first female winemaker in Hungary and possibly the world. Dry Furmint Rocks. Write that down. Sometimes they’re aged in stainless steel, and sometimes they spend time in oak (like this one) making it dare-I-say burgundy-esque… A thing of beauty.

The Stolpmans aren’t just great with wine, and stubborn as hell to be working with a grape like Roussanne (bless them for doing it for us), they’re also great people doing taking great care of all those in they’re wine family. Everyone is a full-time employee with benefits and they make a non-profit wine (also delicious) who’s profits go 100% back to the winery’s crew. “Aromas of Asian pear and honeysuckle sprinkled with citrus tell the tale of a rich, indulgent Roussanne ready to coat the palette in full-bodied splendor. Virtual event attendees will delight in 3 different and spectacular premium Cavas while we all learn about Conservas, thanks for Chef Jonah!
This interactive tasting will not only allow guests to experience a flavor exploration sure to tantalize their taste-buds but will also be ultra-fun as we compose our conservas and thoughtful accompaniments under the guidance of Miller. Azimut Brut Nature NV
This is a great cava from one of the best regions of and from a producer that likes to show a little personality. This is a great apertif, vibrant and just the right texture of bubbles to encourage another glass. A blend of the classic varietals for cava; Macabeo, Xarel-lo and Paralleda, this wine is 100% organic and 100% delightful.
Naveran Brut Vintage Reserva
“This grower Cava is made from 100% estate grown, organically farmed fruit with extended lees aging far beyond the minimum requirements for the Cava DO. Made by the Naveran family since 1901. This winery has a tradition of crafting Cavas that are superb expressions of clean, bright, citrus-inflected aromas and flavors with beautiful texture and weight from the extended lees contact, designed to stand up among the great sparkling wines of the world.”
Parés Baltà Blanca Cusiné 2012 Gran Reserva
Blanca Cusiné was crafted as a tribute to the women of Parés Baltà and more specifically their youngest daughter Blanca, whom was born the same year as the first vintage of this wine (2002).
The 2012 Blanca Cusiné is elegant, aromatically profound with notes of its maturation shining through. It is golden in color and has layers of toasted apricot compote, lemon curd, and a long leesy finish. A sure testament of the beautiful blend of Xarel-lo, Chardonnay, and Pinot Noir.

Alta Alella MIRGIN Gran Reserva Brut Nature 2017
Alta Alella is an “expression of freshness as a new way of understanding cava”. This winery is run by husband and wife team Josep Maria and Christina. They farm their vineyards organically and sustainably, establishing connection and responsibility to make a product that can withstand time and many generations to come.
The 2017 MIRGIN is a produced in traditional method with extended lees agiing for a minimum of 30 months. The wine is vibrant with notes of white fruits, green almonds, and intertwined citrus. The bubbles are expressive and well integrated with the toasty briochey notes of lengthy lees aging.
Juvé & Camps Reserva de la Familia Gran Reserva Brut Nature
Reserva de la Familia was originally produced exclusively for the Juvé family and gifted to close friends. Today Juvé & Camps’ most iconic wine is the world’s best-selling Gran Reserva cava and can be found at award-winning restaurants around the world. Following the tradition, Reserva de la Familia is always a vintage cava, no dosage is added, and each bottle is numbered.
Reserva de la Familia is an attractive and bright Cava, pale golden in colour, with tiny and abundant bubbles that rise in strings of beads, culminating in a persistent crown. Deep, intense and elegant, initially evokes notes of ripe white fruits followed by hints of fennel, toast and citrus to complete its distinguished aroma. Its creamy mousse is perfectly integrated in the palate, making its texture in the mouth simultaneously fresh, rounded, and evocative.
Vilarnau Brut Reserva
Vilarnau is produced 250 metres above sea level in the in the highest and windiest municipality of Sant Sadurni d’Anoia. The blend of Macabeo, Paralleda, and Chardonnay come together balanced, with layers of fresh fruits and flowers, out of the oven pastries and lingering notes of honey and toast. This wine is incredibly fresh will be a delight to consume on any occasion.
Roger Goulart Coral Rosé
Roger Goulart was one of the first wineries in Spain to age his wines in underground caves, 30 meters below sea level, similar to those of Champagne. Through the last 135 years, the winery has earned a well-deserved reputation for high quality traditional method sparkling wines. Their wines are full of character, texture and beautifully structured.
The Coral Rosé is not exception. It is “pale pink color, bright, with abundant fine bubbles and corona formation. On the nose it has fresh and intesense notes of red strawberry with a background of sweets and marked varietal character. On the palate it is fresh and elegant, powerful and persistent with a silky and balanced finish.”
